Cochifrito is Castilian fried suckling pig pieces — marinated in garlic and lemon, then deep-fried until the skin crackles and the meat is juicy. Different from cochinillo asado (roasted whole).

Cochifrito is a Castilian specialty, particularly associated with Segovia and Valladolid (the same regions known for cochinillo asado). While cochinillo is roasted whole in an oven, cochifrito cuts the pig into pieces, marinates them, and deep-fries — making it a more everyday preparation. The technique predates the oven-roasted version.

Golden, bite-sized pieces of suckling pig with a blistered, crackling skin and tender, juicy meat inside. The garlic-lemon marinade flavors every fiber. Eaten with your fingers, washed down with a cold beer.

The suckling pig's skin has a high collagen content; deep-frying at 180°C rapidly dehydrates the skin, turning the collagen into a brittle shell that crackles. The marinade's lemon juice (citric acid) partially denatures surface proteins, tenderizing the meat.

Variations

Some add paprika to the marinade; the pig's age affects tenderness; served with lemon wedges.

    Watch out

    Marinate at least two hours so the lemon and garlic reach the meat — the acid also loosens the surface so the fry crisps better.
