Nan-ru / hong-fu-ru — soy-curd cubes fermented in red yeast rice and rice wine. Pungent funk for braised dishes and morning congee.

Fujian and Guangdong, first recorded by name in Li Rihua's Ming-dynasty Penglong Yehua, which describes the people of Yixian (Anhui) making it in summer and autumn. The red color comes from Monascus purpureus mold (red yeast rice) — the same organism behind the cholesterol drug lovastatin's natural source.

Liaofu (廖孚) and Wangzhihe brands lead the supermarket aisle; Wangzhihe (Beijing, founded 1669) makes both red and grey 'stinky' varieties — the grey one is what's spread on Beijing roast lamb buns.

Cubes the color of dried rose petals, soft as ricotta, sitting in murky red brine. Stink-cheese pungency on the nose, sweeter on the tongue — sweet rice wine, salt, mushroom funk. Smear half a cube on a steamed bun: a meal.

Firm tofu cubes air-dried 2 days, salted, then submerged in red yeast rice + rice wine + spices for 3–6 months. Mold protease breaks soy protein into free amino acids; the wine carries them into solution. Temperature must stay below 25°C or the brine spoils to acetic.

Variations

Hong fu-ru / nan-ru (red, sweet, Fujian-Cantonese, for char-siu marinade and morning congee); bai fu-ru (white, milder, the dipping kind for hot pot); chou fu-ru (grey/stinky, Beijing, the Wangzhihe original).

    Cut firm tofu into 3 cm cubes; salt-cure 24 hr to expel water.

    Watch out

    Salt-cure until the cubes weep water and feel firm-dry — surface moisture invites the wrong rot.

    Inoculate with Actinomucor elegans mold spores; let mold cover at 18 °C for 4–6 days.

    Watch out

    You want a clean white fuzz coating each cube — snowy-white mold is right; grey or black means toss it.

    Pack into jar with red yeast rice + Shaoxing wine + salt + chili; submerge fully.

    Watch out

    Submerge the cubes fully in the wine brine — any nub poking above the liquid molds and spoils.

    Watch out

    Keep it cool and dark below room heat — warm above that and the brine sours to vinegar.
