Sweet soy sauce — soy + palm sugar + galangal + star anise reduced to molasses-thick. Indonesian glaze for satay and nasi goreng.

Hokkien-Chinese kecap (酱) loanword, sweetened with Indonesian palm sugar to suit local taste — the marriage produced kecap manis sometime in the 17th-18th c. Dutch colonial trade era. ABC (Heinz-owned since 1999) and Bango (Unilever-owned since 2001) are the two dominant brands; Bango began in 1928 as a home industry in Benteng, Tangerang (founded by Tjoa Pit Boen / Yunus Kartadinata and his wife Tjoa Eng Nio); its large Subang factory only opened around 1997-98.

Bango's pre-Unilever Cap Bango factory still uses ceramic crocks for the soy ferment, while ABC switched to stainless 1990s. Bango is sweeter and more viscous; ABC is thinner and saltier. Indonesian cooks pick a brand and stay loyal — switching alters every dish you make. Real kecap manis lists palm sugar, not high-fructose corn syrup.

Black, thick as fresh molasses, coats the spoon. Sweet first like burnt-sugar caramel, then soy salt, then a faint herbal lift from galangal and star anise. Not interchangeable with Chinese sweet soy — it's sweeter, thicker, more aromatic. Brushed on satay during the last minute of grilling; stirred into nasi goreng off-heat to glaze the rice.

Soy sauce base is a 6-month aspergillus-fermented black-soybean brew (with roasted grain) (kecap asin), reduced 50% with gula jawa (palm sugar) at 1:1 ratio over low heat 2-3 hours, infused with galangal slices, lemongrass, star anise, and salam leaf in the last hour. The thickness comes from sugar reduction, not starch — that's why it coats food like a glaze when it cools.

Variations

Kecap manis (sweet, the dominant), kecap asin (salty, the parent base), kecap sedang (medium, between the two). Bango (richer, traditional), ABC (thinner, more accessible), Cap Orang Jual Sate (regional Java premium). Kecap manis Cirebon is artisanal and uses cassava-derived palm sugar from local nira.

    Combine 250 ml dark soy sauce, 250 g palm sugar, 1 thumb galangal sliced, 3 star anise in a pot.

    Bring to gentle boil; reduce heat.

    Bring it up to just a gentle boil then drop the heat — a hard boil scorches the palm sugar and turns it acrid.

    Simmer 25 min until reduced to thick syrup that coats a spoon.

    Watch out

    Stop reducing the moment it coats the back of a spoon — it thickens more as it cools, so over-reduce now and it sets hard.
