Where it comes from

Hto-hpu nway (literally 'warm tofu' in Shan) is the soul of Shan breakfast cooking — distinct from Bamar because the chickpea-flour tofu (a Shan invention, not Chinese tofu) goes into the dish warm and just-set, almost porridge-like. The dish anchors every market in Taunggyi, Hsipaw, and Inle Lake. The chickpea-flour base is naturally gluten-free and gives the soup a velvety unctuousness that soybean tofu cannot provide. The Yunnan-style chili garlic oil drizzled on top is the Shan signature.

On the plate

First a spoonful of the tofu-noodle bowl: the chickpea porridge is hot and velvety, almost like a savory polenta; the noodles underneath emerge as you eat. Chili oil's smoky-numbing-hot punches through; crushed peanuts give crunch; lime brightens everything. A Shan-State alternative universe to khao swè.

How it works

Chickpea flour's starch and protein both hydrate slowly — the 30-min rest is essential for full hydration. As it heats with constant whisking, the starch gelatinizes (at 65-70°C) and the protein partially coagulates, creating the soup's silky-but-thick body. Without continuous whisking, lumps form and the texture goes from velvet to grainy.

Variations

Inle Lake version is most-watery; Taunggyi version is thicker; Hsipaw northern version uses more chili and less garlic; Mandalay-Shan diaspora restaurants serve it with shredded chicken on top.

    Make chickpea tofu base: in a bowl, whisk 200g chickpea flour (besan) with 500ml cold water until smooth. Let rest 30 min.

    Bring 1L water + 1 tsp salt + 1 tsp turmeric to boil in a heavy pot. Slowly stream in the chickpea slurry while whisking constantly. Reduce heat to medium-low.

    Cook 10 min, whisking, until mixture thickens to porridge — silky, pale-yellow, holding shape but still pourable. Keep warm.

    Cook 400g flat rice noodles per package; drain. Make chili-garlic oil: heat 6 tbsp peanut oil to 160°C, pour over 4 tbsp Sichuan chili flakes, 6 minced garlic cloves, 1 tsp ground roasted Sichuan pepper. Let infuse.

    Assemble bowls: rice noodles at bottom, ladle hot chickpea tofu mixture over (covering noodles), drizzle 1-2 tbsp chili-garlic oil, scatter chopped scallions, cilantro, crushed peanuts. Squeeze lime to taste.
