
Babenda is a traditional Mossi stew, originally made with wild greens (vahatamia and other foraged leaves) and potash (kaun) as a natural alkalizer that aids digestion. Modern versions use cultivated greens (spinach, cabbage, beet greens) and skip the potash.
Spoon up babenda — dark-green stew with visible greens, millet grains, chunks of meat or fish, slightly thick from peanut. Bite: deep umami from sumbala and smoked fish, the multiple greens give complex earthy notes, the millet adds substance. With tô on the side, this is the Mossi village meal — traditional, sustaining, deeply nutritious.
Sumbala is the umami secret — without it, babenda is just a vegetable stew. Mixed greens provide complex flavor; using only one type is less authentic.
