Tender fried eggplant and al dente spaghetti, topped with crumbled ricotta salata and basil.

Named after Bellini's 1831 opera Norma, the Catania-born composer's masterpiece. Catanian legend credits playwright Nino Martoglio, who tasted the dish in the early 1900s and reportedly cried out 'Chista è 'na vera Norma!' — 'this is a real Norma,' meaning a masterpiece. The dish itself is older — Sicilian peasant cooking around the eggplant the Arabs introduced in the 9th century.

Spaghetti or rigatoni in a rust-red tomato sauce, studded with fork-tender fried eggplant cubes. Torn basil goes in off the heat. The finishing snow is ricotta salata — pressed, salted, aged sheep's-milk ricotta — grated coarsely on top so it doesn't melt. Sweet eggplant against sharp salty cheese is the whole point. Soft mozzarella is the wrong cheese.

Eggplant must be salted and rested 30+ minutes to draw out moisture, then deep-fried (not sautéed) in olive oil hot enough to seal — about 180°C. Pan-frying gives spongy, oil-logged cubes; deep-frying gives a crisp shell with a creamy interior. Ricotta salata is non-negotiable — fresh ricotta would dissolve into the sauce; pecorino is too sharp; parmesan is wrong region.

Variations

Catania original uses long fried eggplant slices laid over the pasta; Palermo cooks dice and stir through; modern Sicilian chefs at trattorias like Me Cumpari Turiddu plate the ricotta salata as a tableside grating to keep texture distinct.
