Tagine loubia — white bean tagine — is a Moroccan everyday winter dish, closely related to the existing Loubia (Moroccan tomato white beans) in the database, but the tagine version is cooked in the clay tagine pot with larger cuts of meat rather than being a simple stove-top bean stew. White beans are eaten across Morocco, cheap and filling, and in the tagine they absorb the meat broth and tomato sauce until they are plump and soft. The dish can be made vegetarian by omitting the meat, which makes it a common Ramadan dish.

The beans are plump and creamy, saturated with tomato and meat broth; the sauce is thick and deeply savory, the cumin sharp. With bread, it is the most comforting winter bowl.

White beans are denser and starchier than chickpeas, which means they take longer to cook but produce a thicker, creamier sauce when they do. Their starch leaches into the cooking liquid and creates a natural emulsion with the tomato and the rendered meat fat, giving the sauce a velvety texture that needs no thickener. The tomato provides acid that helps break down the bean skins during cooking, and cumin, the dominant spice, is the classic Moroccan pairing for white beans.

Variations

Can be made vegetarian without the meat. Some add hot peppers whole. A version with kefta meatballs is also common.

    Brown 500 g lamb or beef in 2 tbsp olive oil; add 2 chopped onions, 4 garlic, 1 tbsp cumin, 1 tsp paprika, salt; cook 5 min.

    Add 2 cups soaked white beans, 3 chopped tomatoes, 2 tbsp tomato paste, water to cover.

    Cover and simmer 50-60 min until beans are very tender.

    Watch out

    Simmer until the beans go truly creamy-soft — their released starch is what thickens the sauce, so undercooked beans mean a thin, watery stew.
