Fava bean tagine is a Moroccan spring dish, made when fresh fava beans are in season and the markets are full of them. Fava beans are one of the oldest cultivated crops in North Africa, and they are eaten in Morocco in every form: dried in bissara soup, fresh in tagines, and raw as a snack. In the tagine, fresh shelled favas are cooked with lamb or beef, tomatoes, cumin and a little chermoula, and they cook quickly because fresh beans need only 15-20 minutes. The dish is bright, green and distinctly spring-like, unlike the heavier winter tagines.

The favas are bright green and tender, the meat savory, the tomato-cumin sauce is light and fresh. It tastes of spring produce at its peak.

Fresh fava beans cook much faster than dried, because their starches are already partially hydrated and their cell walls are still soft. They need only 15-20 minutes in the tagine, and overcooking turns them grey and mealy. The cumin, which is the dominant spice in most Moroccan fava dishes, pairs with the bean's earthy flavor the same way it does in the existing Bissara soup. The tomato provides acid that keeps the beans bright green during cooking.

Variations

Some add artichoke hearts alongside the favas. A vegetarian version uses only beans and chermoula. Smen stirred in at the end is traditional.

    Brown 500 g lamb chunks in 2 tbsp olive oil; add 2 sliced onions, 4 garlic, 1 tbsp cumin, 1 tsp paprika, salt; cook 5 min.

    Add 2 chopped tomatoes and water; simmer covered 25 min.

    Add 500 g shelled fresh fava beans.

    Simmer uncovered 15 min until beans are tender.

    Watch out

    Simmer the fresh favas only 15 minutes — cook them longer and they go grey and mealy instead of staying bright and tender.
