Djerba, Tunisia's largest island, developed a culinary identity shaped by centuries of Berber, Arab and Jewish coexistence. The couscoussier — the traditional double-boiler steamer used for couscous — was repurposed for rice, applying the same steam logic to a grain dish uniquely Djerbian in character. Coastal households substitute octopus or cuttlefish for meat when the catch permits, while inland versions consistently feature lamb offal alongside vegetables.
Separate, turmeric-gold grains carrying deep savory meat fragrance; liver pieces add a brief iron note; chard and parsley remain bright green, providing a cool herbal finish at each mouthful.
Steam at 100°C fully gelatinizes rice starch without oversaturation, keeping grains distinct. Volatile aromatic compounds and fat droplets from the meat and spice layer rise in the steam and penetrate the rice above.
