An ancient dish across the wheat-belt of the Arabian peninsula and Levant, with documented preparations in the 10th-century Baghdadi Kitab al-Tabikh under the name harisa. Across the Gulf it's an iftar staple in Ramadan — easy on the stomach after a fast, energy-dense, communal. Variants exist as far west as Algeria (rfissa relatives) and as far east as Armenian harissa.

Cracked wheat and meat — usually lamb or chicken — cooked together for hours and pounded until the grains and meat fibers fuse into a thick, pale-grey porridge with no distinct pieces. A pour of clarified butter on top, sometimes a dust of cinnamon. Texture is somewhere between risotto and oatmeal — smooth, with a faint chew. Eaten hot with a spoon; cools to a stiff paste.

The pounding is the dish. Hours of slow simmer alone leaves wheat and meat as separate components — what makes it harees is the active mashing with a wooden mihbash paddle until the proteins and starches denature into a single homogeneous matrix. Modern blender shortcuts produce the right look but wrong texture: too smooth, no fiber memory, eats like baby food.

Variations

Gulf harees with lamb or chicken and a clarified-butter pour; Levantine harisa runs sweeter and is sometimes a dessert; Armenian harissa uses chicken with cumin; Algerian rfissa is the western cousin.
