New Zealand's iconic mince + cheese pie — ground beef in gravy topped with melted cheddar, encased in shortcrust + puff pastry. The Kiwi national pie sold at every dairy, petrol station, and rugby game. Distinct from Australian by added cheese.

The mince and cheese pie is New Zealand's most-loved meat pie variant. Brought from British meat-pie tradition by 19th-century colonists (earliest NZ pie reference 1863), Kiwified through cheese addition in the 1970s. Annual Bakels NZ Pie Awards (since 1997) crown the year's best. Eaten at rugby matches and at smoko (mid-morning break).

Shortcrust and puff pastry shatters; molten cheddar hits first, then deeply savory beef mince in Vegemite-Worcestershire gravy. Squeeze tomato sauce through the steam vent for sweet-tart contrast. Eat at an Eden Park All Blacks game with a Steinlager.

Two principles: (1) Cooling the mince filling before assembly prevents soggy bottoms. (2) Cheese ABOVE the mince (not mixed in) creates the 'cheese-melt' layer that distinguishes NZ from Australian pies.

    Heat 2 tbsp oil; cook 1 diced onion 6 min. Add 600g ground beef; brown 8 min.

    Add 2 garlic + 1 tbsp tomato paste + 2 tbsp Worcestershire + 1 tbsp Vegemite + 1 tsp paprika + 1 tsp Italian herbs + 1/2 tsp nutmeg + salt + pepper.

    Add 350ml beef stock + 1 tbsp soy + 1 bay leaf. Simmer 25 min.

    Watch out

    Simmer the mince a full twenty-five minutes until the liquid reduces and the flavors deepen and darken.

    Stir in 2 tbsp flour slurry. Cool 20 min.

    Watch out

    Stir the flour slurry in and simmer briefly until the filling is thick enough to mound on a spoon.

    Preheat oven 200°C. Line 6 individual pie tins with shortcrust pastry.

    Watch out
