
Sambusa Tajik

Where it comes from
Sambusa (Tajik/Persian; also samsa/sambusak in other Central-Asian languages) is the universal Central-Asian-Middle-Eastern pastry — but distinguished from the deep-fried Mozambican chamuças, Somali sambusa, and Indian samosa by being BAKED in a tandoor. The tandoor-baking gives the pastry a unique crisp-yet-tender texture: the high direct heat (300°C+) puffs the dough quickly, the dry environment crisps the surface. Tajik bazaars (Mehrjon, Sahovat) have specialized samosa-tandoor bakers who can produce 200+ samsa per hour. The dish is the universal road-trip food: keeps well at room temperature, easily eaten with hands, and provides substantial calories. Wedding and Eid celebrations feature decorative samsa with patterns scored on top.

Bite into a hot samsa — golden-brown crisp pastry shatters between teeth to reveal a generous pocket of juicy spiced lamb-and-onion filling. First bite: the crust is crackly-tender (not greasy like deep-fried), the filling is moist and well-seasoned with cumin, coriander, mint, the onion has rendered some sweetness. How it works
Tandoor (or hot-pizza-stone) baking at 220°C+ provides direct radiant heat to the pastry — the surface crisps immediately while the interior dough cooks via residual heat. The lamb filling cooks at the same time as the pastry, so the juices baste the dough from inside, creating the crisp-yet-moist texture. The thin pastry (2-3 mm) allows complete cooking in 25-30 min. Triangle shape creates four sealed corners that prevent leakage; the wider base provides structural stability during baking.
Variations
Pumpkin samsa is the autumn-winter version, popular in Pamir mountains. Chicken samsa uses ground chicken thighs. Cheese-and-greens samsa uses fresh cheese with chopped scallion and dill. Mini cocktail samsa is for catering. Tandoor-fired samsa (the truly traditional version) requires actual tandoor equipment. Diaspora deep-fried samsa is more like Indian samosa — easier but not authentic.

Make dough: combine 400 g all-purpose flour + 1 tsp salt + 220 ml warm water + 2 tbsp vegetable oil. Mix into a soft dough. Knead 8 min until smooth. Cover; rest 30 min.

Make filling: in a bowl, combine 500 g ground lamb + 2 large finely-chopped onions + 4 minced garlic cloves + 1 tsp ground cumin + 1 tsp ground coriander + 1 tsp dried mint + 1/2 tsp paprika + 1.5 tsp salt + 1 tsp pepper + 2 tbsp cold water. Mix thoroughly with hands.

Optional pumpkin filling: in a hot pan, sauté 1 chopped onion in 2 tbsp butter; add 400 g cubed pumpkin + 1 tsp cumin + 1/2 tsp coriander + salt; cook 10 min until tender. Cool.
