Couscous belboula — barley couscous — is the Amazigh (Berber) alternative to the wheat-semolina couscous that most of the world knows. In the High Atlas and the Souss valley, barley grows where wheat cannot, and it is barley that has sustained the mountain and semi-arid populations for centuries. Belboula couscous is darker, nuttier, and coarser in texture than standard couscous, and it is steamed the same way — in a couscoussiere, in three passes — but the barley grain holds its shape differently, staying more distinct and chewy. It is served with the same meat-and-vegetable broth as wheat couscous, but it carries a nutritional profile that is higher in fiber and lower in gluten.

The grains are darker, larger and chewier than wheat couscous, with a toasty, nutty flavor; they soak up the savory broth but hold their texture longer. Over lamb and root vegetables, it tastes of the mountains.

Barley's starch composition differs from wheat: it has more beta-glucan (the soluble fiber that gives barley its cholesterol-lowering reputation) and less gluten-forming protein, which means the grains stay distinct and firm rather than clumping the way wheat couscous can. The three-steam method is the same as for wheat couscous, but barley requires slightly more water between steams to hydrate fully, because its bran layer is thicker and slows absorption. The result is a couscous that reheats better than wheat, since the barley grain's structure resists the mush that leftover wheat couscous becomes.

Variations

In the Souss, it is sometimes served with argan oil instead of butter. Some add amlou (argan-almond-honey paste) as a topping. Cornmeal couscous (belboula with corn) is a related variant.

    Soak 500 g barley couscous (belboula) in cold water 5 min; drain.

    Steam in a couscoussiere 15 min; turn out, break up, drizzle with 1 cup cold water and 2 tbsp oil; steam 15 min more.

    Watch out

    Between steams, break up the couscous and sprinkle water so the barley hydrates through its thick bran — skip this and the grains stay chalky at the core.

    Turn out again; add 3 tbsp melted butter and salt; fluff; steam a final 10 min.

    Meanwhile, in the bottom of the couscoussiere, cook 1 kg lamb pieces with 2 chopped onions, 4 diced carrots, 2 diced turnips, 2 diced zucchini, 1 cup chickpeas, 1 tsp saffron, 1 tsp ginger, 1 tsp turmeric, salt, and water to cover; simmer 40 min.

    Mound the barley couscous in a large dish; arrange the meat and vegetables on top; pour the broth over.
