Pumpkin tagine is a Moroccan autumn dish, made when pumpkins and winter squashes fill the markets. Morocco has a long tradition of sweet-savory vegetable tagines, and pumpkin is the sweetest of the autumn vegetables, its flesh breaking down into a glossy orange sauce as it cooks. The dish is often vegetarian, which makes it a fasting dish during Ramadan, but a version with lamb is common for everyday meals. Cinnamon and chickpeas are the constant companions: the cinnamon enhances the pumpkin's natural sweetness, while the chickpeas add substance and earthiness.

The pumpkin has melted into a sweet, glossy orange sauce; the chickpeas are silky, the cinnamon is warm, and if there is lamb it falls apart. Over couscous, the sweetness of the pumpkin and the savoriness of the broth merge completely.

Pumpkin breaks down faster than most tagine vegetables, its cell walls collapsing and releasing pectin and starch that thicken the sauce naturally, giving it a glossy, almost jam-like consistency. This is the same mechanism that makes pumpkin pie filling set: the fruit's own pectin does the work, no added thickener needed. The cinnamon, a warm bark spice, contains cinnamaldehyde which enhances the perception of sweetness without adding sugar, which is why it pairs so well with pumpkin across cuisines. Chickpeas, cooked in the pumpkin-thickened broth, absorb the sweet sauce and become the savory counterpoint.

Variations

Lamb chunks can be added for a heartier version. Some use butternut squash. A pinch of nutmeg is a northern Moroccan addition. Drizzle honey at the end for extra sweetness.

    In a tagine, heat 2 tbsp olive oil; add 2 sliced onions, 1 tbsp ginger, 1 tsp cinnamon, 1 tsp paprika, salt; cook 5 min.

    Add 800 g pumpkin or squash, cubed; 2 cups cooked chickpeas; 2 chopped tomatoes; toss.

    Add 1 cup water; cover and simmer 35-40 min until the pumpkin is soft and partially dissolved into the sauce.

    Watch out

    Simmer until the pumpkin softens and part of it melts into the sauce — that dissolving flesh is what thickens the tagine to a glossy, jammy body, no thickener needed.

    If using lamb, brown 500 g chunks first and add with the pumpkin.
