Bacalhau com Broa is one of the '365 ways with bacalhau' that the Portuguese claim — one for every day of the year. The dish is rooted in the corn-growing north (Minho, Trás-os-Montes), where broa de milho (rustic corn-and-rye bread) became a daily staple, crumbled with garlic and olive oil into a topping, packed over flaked salt cod, and roasted until the crust is crisp and golden. It's a thrift dish — the bread is yesterday's loaf — that became a Sunday treat. Pairs with vinho verde or a young Dão red.

    Soak 600g salt cod in cold water 24-48 hours, changing water 3-4 times. Drain, flake into large pieces, remove skin and bones.

    Watch out

    Soak the cod until a raw nibble tastes pleasantly salty, not harsh — change the water often; under-soaked cod is inedibly salty, over-soaked turns flat.

    Slice 2 large onions thin; sauté in 100ml olive oil over medium heat 15 minutes until deeply caramelized. Add 6 minced garlic cloves at the end, 1 minute.

    Watch out

    Cook the onions slow until they collapse to a deep golden-brown and turn sweet — rushing them on high heat leaves a raw bite that throws off the whole dish.
