Espetada Madeirense is the island's signature grilled meat, distinct from mainland shashlik in two ways: the skewer is a thick fresh bay-laurel branch (loureiro) that perfumes the meat as it cooks, and the finished skewer is hung vertically on a custom stand so the garlic-butter brushed on top drips slowly down all sides. Sunday family gatherings and tourist tavernas in Funchal both serve it the same way.

Madeiran espetada uses fresh bay-laurel branches (not metal skewers) — heat volatilizes the bay's aromatic oils (eugenol, cineole) from the fresh branch and leaves, perfuming the meat as it grills. The hook display lets the rendered fat and garlic butter drip onto bolo do caco (garlic flatbread) below, which soaks up the juices.

Variations

    Cube 1 kg beef sirloin or rump into 4cm pieces. Trim a thick fresh bay-laurel branch (or use a wide flat metal skewer if unavailable).

    Marinate beef 30 minutes in coarse salt, 4 minced garlic cloves, 2 tbsp olive oil, freshly ground black pepper, and 4 crushed bay leaves.

    Thread the beef onto the bay-laurel branch, packing pieces tightly together (no gaps — the meat self-bastes).

    Watch out

    Pack the beef cubes tight against each other on the branch with no gaps — pressed together they baste one another and stay juicy; spaced out, they dry.

    Build a strong charcoal fire. Wait until coals glow gray with no flame. Grill the skewer over hot coals 6-8 minutes per side, turning once.

    Watch out

    Grill only once the coals glow ash-gray with no flame — live flames scorch the outside before the inside cooks and burn off the bay aroma.

    While grilling, melt 80g butter with 4 more minced garlic cloves until fragrant.

    Transfer the cooked skewer to a vertical hanging stand (or just lay it on a wooden board). Brush generously with garlic butter; let the butter drip down the meat. Slice off cubes to eat.
