Sefid mahi ('white fish') is the Caspian kutum (Rutilus kutum, a roach of the carp family), the Caspian whitefish that runs upstream from the Caspian into the Gilan and Mazandaran river mouths every spring. Persian Nowruz (March 21) requires this fish on the table — it represents life, freshness, and renewal. The traditional preparation stuffs the cavity with sour-orange juice, turmeric, walnut paste, and herbs, then pan-fries the fish whole in oil. Served with sabzi polo (herb rice).

Sefid mahi (Caspian whitefish) has higher omega-3 than ocean fish and a finer flake — walnut paste stuffing prevents drying because walnut oil saturates at 78°C. The lemon and sour orange in the marinade trigger Maillard reaction faster than acid-free curing.
Variations
Mazandarani sefid mahi uses pomegranate-walnut stuffing; Gilani version uses herb-only stuffing; the festive Nowruz version adds barberries on top — three Caspian celebrations.

Clean a 1.2kg whole white fish (sea bream, sea bass, or mullet works). Score 3 diagonal cuts on each side.

Make filling: combine 100g ground walnuts, 2 tbsp turmeric, 4 minced garlic cloves, juice of 2 lemons (or 1 sour orange), 1 tbsp salt, 1 small bunch chopped cilantro, 1 small bunch chopped fenugreek leaves.

Heat 4 tbsp oil in a large pan. Pan-fry the fish 6-7 min per side over medium heat, basting with the oil — until skin is deeply golden.
