The 扒 braising category is documented in Tianjin's restaurant culture from the late Qing era, when the city's prosperous two-category meat restaurants (二荤馆) made their names on the 四大扒 and the 八大碗. The most celebrated 二荤馆, including 天一坊 (founded Guangxu 5th year, 1879), built their reputations on precisely this tradition. Spined sea cucumber (刺参) from the Bohai Gulf and Shandong coast has been Tianjin's premium luxury ingredient since the Qing dynasty. By the late 19th century, 扒刺参 had become established as the pinnacle of the 扒 category — the dish that separated a master from an apprentice by the single act of the large-wok flip.

The skin yields to the gentlest pressure—gelatinous but not sticky, supple but not mushy—and the interior is dense with the deep savour of the broth absorbed over forty minutes of slow braising. The glossy sauce coats the tongue long after the sea cucumber is swallowed.

Spined sea cucumber body wall is approximately 76% collagen by dry protein weight. Its thermal denaturation temperature is around 35°C—unusually low for an animal protein—meaning gentle braising at 85–90°C converts a substantial fraction of fibrillar collagen to soluble gelatin, transforming the initially tough wall into an elastic, slippery-smooth texture without structural collapse. Prolonged low-heat braising also drives Maillard-flavoured stock compounds deep into the tissue via osmotic pressure gradients. The 大翻勺 is a momentum-conservation manoeuvre: by swinging the wok forward and upward with a sharp wrist snap, the chef uses the liquid's inertia to keep the sea cucumber stationary relative to the broth while the wok inverts beneath it—the dish lands upright on the plate without spatula contact.

Variations

Red-braise (红扒) versions use soy sauce and rock sugar for a darker, richer result; white-braise (白扒) emphasizes the natural colour and clean flavour of the sea cucumber in a pale, clear sauce. Some high-end versions finish with a garnish of dried scallop or crab roe. Outside Tianjin, red-braised sea cucumber is common in Shandong and Liaoning banquet traditions.
