Relleno blanco is the festive counterpart to relleno negro in Yucatecan cuisine. The dish combines pre-Hispanic turkey (the native bird of Mesoamerica) with Spanish colonial techniques: bread-thickened sauces (typical of Spanish medieval cooking) and pork meatballs (albóndigas). The white color comes from a spice blend that excludes the charred chiles of relleno negro. The dish is most associated with major celebrations in Mérida and across the Yucatán interior — weddings, baptisms, and saint's day festivals. It is one of the most traditional and labor-intensive dishes of the Yucatecan repertoire.
