Chłodnik

Pomeranian·Easy·20 min active + 10 min resting

Chłodnik is a Polish cold beet soup made with grated cooked beets, kefir (or buttermilk), cucumber, dill, and chives. Served ice-cold, its shocking pink color and tangy-sweet flavor make it the quintessential Polish summer soup.

Chłodnik has roots in the Lithuanian-Polish Commonwealth (both countries claim it). The Polish version typically uses kefir or buttermilk as the dairy base. It belongs to the Eastern European tradition of cold dairy-based soups (like okroshka in Russia). The beet's natural sweetness combined with the dairy's tang creates a uniquely refreshing combination for hot summers.

A bowl of shockingly pink cold soup — grated beets suspended in tangy kefir, with cucumber dice and bright green dill. The first sip is cold, tangy-sweet, and intensely refreshing. The beets give an earthy sweetness; the kefir gives a cultured tang; the cucumber gives crunch. A hard-boiled egg half sits in the center.

Chłodnik's refreshing quality depends on temperature and acidity contrast. The kefir's lactic acid (pH ~4.5) stimulates salivation and creates a cooling sensation. The beets provide natural sugars (sucrose and glucose) that balance the acid. The cold serving temperature (~4°C) enhances the perception of both sweetness and acidity. The cucumber's high water content (96%) adds physical cooling.

Variations

Some use buttermilk or yogurt instead of kefir; some add radish; the beet-to-dairy ratio varies.

How it's made

6 steps · 20 min active + 10 min waiting

  1. 1
    45 min

Boil beets until tender (~45 minutes); cool; peel; grate on the large holes.

    Watch out

Beets are done when a knife slides in with no resistance — undercooked they stay woody and won't grate into soft shreds.

  2. 2
    10 min

In a bowl, combine kefir, grated beets, diced cucumber, chopped dill, and sliced chives.

  3. 3
    2 min

Season with salt, pepper, and a squeeze of lemon juice.

  4. 4
    30 min

Chill in the refrigerator for at least 30 minutes.

    Watch out

Chill a full half-hour at least — the cold is half the dish; served lukewarm the kefir tastes flat and the color muddies.

  5. 5
    2 min

Ladle into bowls; garnish with hard-boiled egg halves and more dill.

  6. 6
    1 min

    Serve ice-cold.
