
Chicken Kyiv — pounded breast wrapped around cold herb butter, breaded and deep-fried. The butter spurts when cut.
Origin is genuinely disputed (Ukraine, Russia and France all claimed). It descends from the French côtelette de volaille; butter-in-cutlet echoes the early-19th-c. Pozharsky cutlet. The earliest printed reference, 'Kiev cutlets from chicken or veal,' appears in the Cookery Digest collecting recipes from a 1913–1914 Moscow housewives' journal. Kyiv oral tradition credits the Continental Hotel (built 1897, operating until 1941). Forgotten between the wars, it revived after WWII.
The 1947 Soviet cookbook Kniga o Vkusnoi i Zdorovoi Pishche standardized the recipe; the original Tarakhov version used the wing-bone-in cut so the cook could lift the cutlet by the bone for service — a presentation Kyiv's Senator Hotel restored in 2019 as a signature.
Crisp golden crust giving way under the knife, then a yellow-green jet of melted parsley-garlic butter onto the plate. White chicken flesh tight from the pound, no pink. Always served with mashed potato or pommes paille to soak the butter pool.
The butter cylinder must be frozen rock-hard (−18°C) before wrapping, and the cutlet must rest 30 minutes after breading and again 15 minutes after a second breading. Double-breading is non-negotiable — single-coat splits during the 180°C fry and the butter escapes early.

Soviet-era boneless mass-canteen cut (the 1980 Olympics version, frozen); Kyiv Senator Hotel wing-bone-in reconstruction (2019); the diaspora American version drops the bone and adds a heavier garlic hit; Lviv chef Yevhen Klopotenko's 2021 sour-cherry-butter variant.

Freeze the butter log rock-hard and double-bread the cutlet: that frozen core plus a sealed double crust is the only thing that keeps the butter inside until the first cut instead of leaking into the oil.
