Grape leaves stuffed with spiced lamb and rice, simmered with sour plum sauce — the Imeretian-Armenian crossover.

Tolma (or dolma) crossed into Imereti from Armenian neighbors and stays close to the Caucasian original — vine leaves rolled around minced lamb, rice, onion, and a green herb mix, then simmered in broth with tkemali (sour plum) sauce. Eaten with matsoni yogurt sauce and fresh herbs on top.

The grape leaf yields with the first bite, releasing rice and minced lamb perfumed by mint and tarragon. Lemon brightens the finish; the leaf itself adds a faint sour-grass note.

Grape leaves contain tannins that slow down the rice's hydration during steaming — which is why tolma rice stays firm even after long cooking. Tarragon's aroma comes from estragole, an isomer of anethole with a relatively high boiling point, so its anise-like note survives the braise.

Variations

Imeretian tolma uses grape leaves only; Kakhetian wraps include cabbage and quince leaves alternating in the same pot — depending on season, the wrapper rotates.

    Soak 25 grape leaves in warm water 15 min if brined; rinse, pat dry.

    Mix filling: 500g ground lamb, 100g rinsed long-grain rice, 1 chopped onion, 4 minced garlic cloves, 1 small bunch chopped each of cilantro/parsley/dill/mint, 1 tsp cumin, 1 tsp coriander, salt, pepper.

    Place leaf vein-side up. Add 1 tbsp filling near stem end; fold sides in; roll into a tight cigar. Repeat.

    Roll each one into a tight little cigar with the seam tucked under — loose rolls unravel in the pot and spill their filling.

    Arrange tightly in a pot. Pour over 600ml broth + 100ml tkemali (or pomegranate molasses). Weight with a plate.

    Pack them in snug and set a plate on top to weigh them down, so they hold their shape and stay submerged as they braise.
