Pisca andina belongs to the Venezuelan Andes — the highland states of Mérida, Táchira and Trujillo, with Táchira as its heartland — where potatoes, milk, butter, cheese and herbs all come off the mountain pastures. Its name traces to the turkey hen, called 'pisca' in the Andes: the soup was once made with turkey eggs, now with poached chicken eggs. A cold-morning breakfast soup, it's long credited with settling the stomach and reviving a traveler.

Adding milk after the potatoes have cooked in water prevents curdling. The eggs cook gently in the just-below-simmer milk, producing tender whites and runny yolks. Queso fresco at the end keeps the cheese fresh and tangy rather than melted.
Variations
Two egg styles: a whole egg poached in the soup, or a beaten egg drizzled in fine threads (pisca con hilo). It also splits on the milk: the common milk-enriched version, a plainer water-only pisca de agua, and a dark pisca negra built on water with the seasonings fried first. Served with wheat arepas and smoked cheese.

Dice 500g potatoes (sabanera or yukon) into 1.5cm cubes. Chop 1 onion, 4 garlic cloves, 1 bunch cilantro.

In a pot, melt 2 tbsp butter; sauté onion and garlic 5 min until soft.

Add potatoes, 750ml water, 1 tsp salt. Simmer 15 min until potatoes are fork-tender.

Pour in 750ml whole milk and chopped cilantro stems (save leaves). Heat gently — do not boil (milk will curdle).
Watch outThe surface should barely shiver — tiny bubbles at the edge, never a rolling churn. If it climbs toward a boil, pull it off the heat.

Crack 4 eggs gently into the soup (or beat and pour while stirring for stirred-egg texture). Cover and cook 3-4 min until whites are set.
