
Sopa Negra

Where it comes from
Sopa negra developed as a thrift-based home dish: leftover cooked black beans (from making gallo pinto for the week) get pureed with sofrito into a hearty soup that stretches the beans for another meal. The poached-egg-in-the-bowl is Costa Rican signature — protein boost without dirtying another pan. Many Ticos swear by sopa negra as the morning-after cure for celebrations; the beans' fiber and the egg's protein reset the system.
On the plate
First spoon: deep mahogany-black soup, creamy from the blended beans, faintly smoky from the sofrito's slow-cook. The soft-poached egg yolk breaks under the spoon, releasing golden richness into the black soup that creates a Mexican-style 'two-color' effect in the bowl. Avocado adds cool creaminess; lime brightens; cilantro fresh-greens. Filling, restorative — you understand why this is the morning-after dish.
How it works
Blending only part of the soup is the Costa Rican touch: full puree makes it baby-food smooth; no puree makes it just bean stew. The 60-40 ratio gives body and bite simultaneously. Cracking eggs directly into very-hot soup is the Tico shortcut to poached eggs — the soup's residual heat (~85°C) is exactly right for soft-poaching protein without curdling whites too quickly. The egg must go in hot and undisturbed.
Variations
Caribbean coast (Puerto Limón) version uses coconut milk and panela sugar for sweeter Afro-Caribbean dimension. Modern Tico restaurants might top with crispy plantain chips. Hangover variant adds extra cayenne and lime. Some kitchens serve the egg separately fried instead of poached in the bowl, but bowl-poaching is the traditional method.

Heat 2 tbsp oil in a wide heavy pot. Sauté 1 chopped onion + 1 chopped red bell pepper + 4 chopped garlic + 4 tbsp cilantro stems chopped 7 min until soft and aromatic.

Add 3 cups cooked black beans (with about 200 ml bean cooking liquid). If using canned beans: 2 × 400 g cans drained, plus 1 cup water.
