
Rourou curry is the Indo-Fijian vegetarian alternative to fish curry — the same Indian-style spice base applied to local taro leaves. Vegetarian Indians in Fiji eat this as their everyday protein-rich meal. Distinct from iTaukei palusami: spicier, with curry-powder profile rather than just coconut.
Spoon up rourou curry — dark-green leaves in golden-orange coconut sauce, mustard seeds and curry leaves visible. Bite: tender leaves, layered curry spice warmth (mustard pungency, curry-powder fenugreek-coriander, ginger sharpness), chili slow burn, coconut creaminess. Vegetarian but heavy on flavor. With rice or paratha, complete meal.
Pre-boil leaves to soften and remove oxalate. Tempering whole mustard seeds in hot oil before adding aromatics is critical for the dish's distinctive Indo-Fijian character.
Variations
Coconut-cream version uses heavier cream. Smoked-fish addition makes it non-vegetarian. Chana dal addition adds chickpeas.
