Rourou curry is the Indo-Fijian vegetarian alternative to fish curry — the same Indian-style spice base applied to local taro leaves. Vegetarian Indians in Fiji eat this as their everyday protein-rich meal. Distinct from iTaukei palusami: spicier, with curry-powder profile rather than just coconut.

Spoon up rourou curry — dark-green leaves in golden-orange coconut sauce, mustard seeds and curry leaves visible. Bite: tender leaves, layered curry spice warmth (mustard pungency, curry-powder fenugreek-coriander, ginger sharpness), chili slow burn, coconut creaminess. Vegetarian but heavy on flavor. With rice or paratha, complete meal.

Pre-boil leaves to soften and remove oxalate. Tempering whole mustard seeds in hot oil before adding aromatics is critical for the dish's distinctive Indo-Fijian character.

Variations

Coconut-cream version uses heavier cream. Smoked-fish addition makes it non-vegetarian. Chana dal addition adds chickpeas.

    Prep 600 g taro leaves (or substitute mustard greens + collards). Wash; remove tough stems.

    Pre-boil the taro leaves and squeeze them dry — this cooks off the raw oxalate that would otherwise scratch the throat; never skip it.

    Heat 3 tbsp oil. Add 1 tsp mustard seeds; sizzle 30 sec.

    Drop the mustard seeds into hot oil and wait for them to pop and crackle — that sizzle releases their nutty aroma and sets the Indo-Fijian character; if they don't pop, the oil's not hot enough.
