A staple of working-class North and Central German kitchens since at least the 19th century, when lentils stored cheaply through winter and stretched a little smoked pork into a full meal. A thick brown stew of brown lentils gone soft but not mushy, diced carrot, leek, celery root, and chunks of smoked bacon or Mettwurst sausage. A splash of vinegar at the end cuts the fat — that sharpness is the whole point. Bread on the side, often with a fried sausage laid across the bowl. If it tastes only of pork, the vinegar got skipped.
