A Mumbai street food invented in the early 20th century by Marwari and Gujarati migrants who brought the puffed-rice habit (mumra/murmura) south to Bombay. The hawkers around Chowpatty Beach standardized the chutney pairing by the 1940s. Kolkata's jhal muri is a related dish — same puffed rice, different spice profile, eaten without onions in some Bengali Hindu homes.

Early-20th-century Bombay invention — Marwari and Gujarati migrants brought the puffed-rice habit south, and Chowpatty Beach hawkers standardized the chutney pairing by the 1940s. Tossed in a wide flat plate, never stirred; chutneys go on at the moment of serving — pre-mixed bhel from a packet always tastes wrong.

A paper cone of puffed rice tossed with chopped onion, tomato, boiled potato, sev (fried gram-flour noodles), tamarind chutney (sweet-sour), green chutney (mint-coriander), and a squeeze of lime. Eaten with a small spoon while walking. Crunchy, sour, sweet, hot, all at once — but only for the first two minutes; the puffed rice goes limp by minute three. Order, eat, walk on.

Tossed, not stirred — the puffed rice is fragile, and a spoon will crush it inside two folds. Vendors mix in a wide flat-bottomed plate with a quick scooping motion. The two chutneys must be added at the moment of serving, not in advance; the puffed rice draws moisture and dies on contact, which is why pre-mixed bhel from a packet always tastes wrong.

Variations

Mumbai Chowpatty bhel uses sweet-sour tamarind and green chutney; Kolkata jhal muri skips onion in many Bengali Hindu households and pushes mustard oil; Bangalore churumuri adds chopped raw mango and coconut.
