
Sweet rice malt drink — cooked rice held warm with malted-barley enzyme water (yeotgireum), strained, sweetened, and served chilled with a few rice grains floating on top.
Sikhye is a Joseon-era home brewing tradition that uses malted-barley enzymes (mainly beta-amylase) to convert rice starch into maltose — the same biochemistry as beer wort, but stopped before fermentation. Historically it was a holiday drink prepared by women of the household for Lunar New Year and Chuseok. In modern Seoul it became a bathhouse staple from the 1980s onward, now sold in canned form by every major beverage maker, and remains the go-to digestif at Korean BBQ restaurants.
Joseon-era home brew using malted-barley enzymes — same biochemistry as beer wort, stopped before fermentation. The 55-60°C hold is non-negotiable: barley beta-amylase optimum, above 65°C the enzyme denatures. Floating grains aren't garnish — as starch leaves them into solution, the now-empty grain is less dense than the sugary water and rises.
An ice-cold pale-amber broth, slightly cloudy, with a dozen swollen rice grains drifting on top like little cushions. The taste is mild — clean malt sweetness rather than sugar-syrup sweetness, with a faint roasted-grain undertone and a ginger lift on the finish. The grains have a soft chew. Drink it after a heavy meal of grilled meat or after a long sauna session at the jjimjilbang — that's where most Koreans first associate it.
The whole drink hinges on the 55-60°C hold: that's the optimal range for barley beta-amylase to chop rice starch into maltose. Below 50°C it works too slowly; above 65°C the enzyme denatures and you get watery sweetened rice instead. The floating-grain signal is real chemistry — as starch leaves the grain into solution, the grain becomes less dense than the now-sugary water and rises. Boiling at the end kills the enzyme and stops further conversion so the drink stays stable in the fridge.
Variations
Seoul standard runs ginger and pine nuts on top; Andong-sikhye is made with raw radish, red chili powder and ginger fermented for a few hours — reddish and spicy-savory rather than sweet (it has no fish; the fish-and-millet ferment is a separate dish called sikhae); ; modern canned versions (Vermont, Paldo) are the BBQ-restaurant default; bathhouse cans since the 1980s.

Rinse 200g malted-barley powder (yeotgireum) in 2.5L lukewarm water in a large bowl. Knead the powder for 3 minutes to extract enzymes. Let stand 1 hour, then carefully decant only the clear amber liquid on top — leave the cloudy starch sludge behind.
Watch outAfter the hour's rest, pour off only the clear amber layer on top — take the cloudy starch sludge with it and the drink turns pasty instead of clean-sweet.

Cook 300g short-grain rice slightly drier than usual (use 1:1 rice-to-water). Cool the cooked rice to about 60°C in a heavy pot or rice cooker.

Pour the strained malt water over the warm rice. Hold at 55-60°C for 4-5 hours — rice cooker on "keep warm" works. The signal it's ripe: individual rice grains rise and float to the surface.

Scoop out a cup of the floating rice and rinse in cold water; set aside for garnish. Strain the rest through a fine sieve into a pot — discard remaining grain.

Add 150g sugar and a thumb of sliced ginger; bring to a boil and skim foam. Boil 5 minutes, then cool. Chill 4+ hours.
Watch outBring it to a real boil for five minutes — this kills the enzyme so it stops sweetening and the drink keeps in the fridge without turning.
