Pickled-cucumber brine, beef, and pearl barley — Russia's documented soup since the 15th century, predating beets in the kitchen.

Rassolnik (рассольник) belongs to Russia's ancient 'rassol' soup family — built on the brine of pickled cucumbers. The Moscow version uses beef, pearl barley, salted cucumbers, potatoes, and herbs. Documented from the late 1400s, it predates the introduction of beets and tomatoes — the sourness comes purely from fermented cucumber brine.

A sour-pickle soup with kidneys or beef, barley, and brine — Russian winter standard, lifting the spirits after vodka. The pickle brine adds salt and sourness without overwhelming the meat broth.

Russian dill pickles ferment in brine, producing lactic acid (not vinegar) — this softer acid profile makes for a less aggressive soup. The kidney's strong minerality needs the sour-salt balance to register as flavor instead of organ.

Variations

Central Russian rassolnik uses beef kidneys; Northern version uses barley and beef; Polish kwasna juszka is the cousin — three pickle soups.

    Soak 100g pearl barley overnight; drain, then simmer in 2 liters of water 40 minutes until tender.

    Simmer the barley until the grains are tender and split open — undercooked barley stays chalky and won't soften once the acid hits.

    Brown 300g cubed beef chuck in butter in a separate pot; add 1 chopped onion and 1 diced carrot, sauté 4 minutes.

    Brown the beef in batches for a real crust, not grey and steamed — that seared surface is where the soup's backbone comes from.
