Albaloo polo is the festive side of Persian rice cookery, colored ruby-red by albaloo, the sour cherries that ripen in early summer across Iran. Cooks candy the cherries in syrup until they keep their tartness, then layer them through saffron rice so each spoonful balances sweet, sour, and the warm perfume of saffron, a dish reserved for guests and celebrations.

Sweet-tart cherries pop against fragrant saffron rice, with crunchy pistachios and almonds on top. It is bright, festive, and just sweet enough to feel like a treat without being a dessert.

Candying the cherries in syrup concentrates their flavor and prevents them from bleeding too much liquid into the rice, keeping the grains distinct.
