
Rabbit tagine has its roots in the High Atlas foothills around Marrakech, where wild rabbit was hunted and slow-cooked with whatever was preserved — prunes, apricots, almonds. The technique migrated into the Marrakech medina restaurants and became a refined version, with caramelized onions and saffron added to the cumin-paprika base.

Rabbit has 10× less intramuscular fat than chicken — that's why it needs a sauce with sugar (raisins) and oil (almond) to prevent drying. The slow braise at 85°C tenderizes without toughening the lean meat.

Cut 1 rabbit (about 1.2 kg) into 8 pieces. Rub with 1 tbsp cumin, 1 tbsp paprika, 1 tsp ginger, 1 tsp saffron threads, salt, pepper. Marinate 1 hour.

Heat 3 tbsp olive oil in a tagine. Brown rabbit pieces 6 minutes; remove.

Sauté 2 sliced onions until softened, 6 minutes. Return rabbit, add 6 minced garlic cloves, 1 cinnamon stick, 400ml water.

Cover and simmer 50 minutes. Add 200g pitted prunes (soaked) and 1 tbsp honey. Simmer 15 more minutes.
Watch outKeep the braise at a gentle simmer, never a hard boil — lean rabbit toughens if the liquid churns; you want it barely bubbling until fork-tender.

Toast 80g blanched almonds in olive oil until golden. Garnish the tagine with almonds, sesame seeds, and chopped parsley before serving.
Watch outToast the almonds just to pale gold and pull them — they carry on colouring off the heat and go bitter if they tip past golden.
