The breakfast soup of Datong and northern Shanxi: sheep offal — heart, liver, lung, tripe and intestine — boiled clean, sliced, and served in a milky, deeply peppery mutton-bone broth with glass vermicelli and a fistful of chopped coriander and scallion. 'Za-ge' (杂割) means the mixed, cut-up bits, and the dish is built to use the whole animal and to warm cold mornings on the windswept northern plateau. Mutton-offal soup, called 羊杂割 or simply 杂割, is a staple breakfast across northern Shanxi and the wider Shanxi-Inner Mongolia border country, and Datong — the cold, coal-and-frontier city in the far north of the province (the 北路, 'northern road') — is its most famous home. It belongs to the herding north, where sheep are plentiful and nothing of the animal is wasted: the offal that banquet cooks discarded became a hearty, cheap morning meal for working people. The dish is shared across the region's cities — Taiyuan, Xinzhou and others each have their own — but the peppery, generous Datong style is the byword. Honest origin: a folk dish of the frontier, with no single founder or fixed date.
The bowl arrives milky-white and steaming, the surface beaded with fat and a red ring of chili oil. The offal is the substance: slices of tender heart and liver, soft strips of lung, chewy tripe and intestine, each boiled and rinsed until clean-smelling, with none of the muttony funk done right. The broth is rich and aggressively peppery — white pepper is the dominant note, sharp in the nose — and the glass vermicelli soaks it up slippery and translucent. Coriander and raw scallion cut through fresh at the top. It is a hot, filling, no-frills bowl, the kind eaten fast on a cold morning and chased with flatbread.
Two things define it: cleaning the offal and building the broth. The organs and tripe must be scrubbed, blanched and rinsed thoroughly — tripe and intestine turned out and scraped, the lot parboiled to draw off the strong smell — or the whole bowl tastes muttony; this prep is the real labor of the dish. The broth is made by simmering sheep bones (and often the offal trimmings) long enough to emulsify the fat into a white, opaque soup, the cloudiness coming from collagen and fat broken up by a hard, rolling boil rather than a gentle one. White pepper is added with a heavy hand — it, not chili, is the signature heat — and glass vermicelli is dropped in to cook through at the end. The chili oil, coriander and scallion go on in the bowl, not the pot.
Variations
Every northern-Shanxi town has its own: Datong's is famously peppery and generous; Taiyuan and Xinzhou versions tune the spice and the cut of the offal differently, and across the border in Inner Mongolia 杂碎 is a close kin. Some bowls go all-offal; others bulk it out with vermicelli, blood, or even a handful of the day's flatbread torn in. The broth may be kept milk-white (the classic) or run clearer and more peppery. Beyond breakfast it is sold all day in winter as a warming bowl. The constant is sheep offal, a hot peppery broth, vermicelli and a green flurry of coriander and scallion.
