Kachin State sits in Myanmar's far north, bordering China's Yunnan, India's Arunachal Pradesh, and reaching up to the foothills of the eastern Himalayas. The Kachin people (Jinghpaw and related groups) developed a highland kitchen distinct from both Bamar and Shan — defined by fermented bamboo shoots (mai dong), Yunnan-influenced pork preparations, glutinous rice as the staple, and an unusual heritage of game and mountain herbs not found elsewhere in Myanmar.

The Manaw festival — the annual Kachin cultural gathering — is the centerpiece of the food calendar. Sticky rice steamed in fresh bamboo cylinders, charred pork with chili paste, fish wrapped in banana leaf with herbs, and turmeric-yellow grain bowls fill the festival tables. Outside of festival, the Kachin household stew is bamboo-shoot pork — fermented bamboo lending sour body to slow-braised pork belly. The Kachin lean heavily on cured and dried meats (sun-dried pork, smoked beef) that reflect their highland storage needs. Modern Kachin chefs in Yangon and Mandalay are reclaiming this cuisine, often paired with Yunnan-style condiments and Tibetan-influenced techniques.
