Yemeni spiced chicken and rice — long-grain rice cooked in flavorful broth with cardamom, cumin, cinnamon, cloves, and lime; topped with roasted chicken pieces, fried onions, and toasted almonds. Distinctly Yemeni in spice balance (heavier on cardamom than Gulf kabsa) and the addition of lime peel that gives a citrus-aromatic backbone.

Kabsa is shared across the Arabian Peninsula, but Yemeni kabsa distinguishes itself with more cardamom, less saffron, and a key ingredient: dried lime (loomi/black lime) which gives the dish a tangy-floral depth. Spoon up kabsa — golden basmati rice grains, juicy chicken on top, crispy-brown fried onions, toasted almonds scattered. Bite: rice carries the deeply-spiced broth (cardamom forward, cumin warm, cinnamon-clove background), chicken is tender from the slow cook, dried lime gives a unique tangy-floral note unlike anything else. Dried lime (loomi) is the Yemeni-Gulf signature — fermented-dried citrus that releases a unique tangy-musky aroma when cooked. Variations

Lamb kabsa uses lamb shoulder instead of chicken — 90 min initial cook. Shrimp kabsa uses prawns — Aden coastal version. Vegetarian uses jackfruit + chickpeas. Fish kabsa uses firm white fish.

    Brown chicken: 1 whole chicken (1.5 kg) cut into 8 pieces. Season with 1 tsp salt + 1 tsp black pepper + 1 tsp baharat (Arabic spice mix).

    In a heavy pot, heat 3 tbsp olive oil. Brown chicken 8 min total. Remove.

    Watch out

    Brown the chicken hard, skin-side first, to a real deep-golden crust — pale chicken means no fond, and the rice loses half its flavor.

    Add 2 chopped onions; cook 6 min until soft.

    Add 6 minced garlic cloves + 1 tbsp grated ginger + 4 chopped tomatoes + 1 tbsp tomato paste. Cook 6 min.

    Add 500 g basmati rice (rinsed and drained) + 900 ml chicken stock + 2 tsp salt. Bring to a boil.

    Watch out

    Off the heat, keep the lid on and leave it a full 10 min undisturbed — this rest lets the steam even out so the rice fluffs up dry and separate instead of sticky.

    Fluff with a fork. Plate: mound rice on a serving platter, chicken on top, scatter fried onions and almonds.
