Persian in origin — faloodeh, served in Shiraz since at least the medieval period as iced rosewater with vermicelli, was an early form of frozen dessert before mechanical refrigeration (made with snow brought from mountains). Brought into India by Mughal courts in the 16th–17th century and reworked with milk, kulfi, and basil seeds in Hyderabad and Bombay during the Mughal-to-British transition.

Mughal courts brought it into India in the 16th–17th century and added milk, kulfi, and basil seeds in Hyderabad and Bombay. Sabja seeds (not chia) must soak 20+ minutes until each swells into a clear gel.
Layered tall — basil seed jelly at the bottom, then noodles, then milk, then rose syrup, then ice cream, then crushed pistachios. Pierce with a long spoon; each scoop pulls from multiple layers. Karachi summer beverage.
Basil seeds (sabja) swell to 12-15 times their volume when hydrated, becoming translucent gel pearls similar to chia but with no flavor of their own. The starch-based vermicelli pieces hold their texture in cold milk; rose syrup is the perfume thread.
Variations
Karachi falooda often uses kulfi rather than Western ice cream; Mumbai versions include malai and dried fruits; Iranian faloodeh is the ancestor — same name, different ratio of milk to ice.
