Rinse the chicken and pat dry. Cut into pieces and place in a large bowl. Add Shaoxing wine, ginger slices, garlic, Sichuan pepper, and salt. Toss to coat evenly.

Transfer the chicken to a steamer basket. Steam over boiling water until the chicken is cooked through and tender.
