Tripas à Moda do Porto commemorates the 1415 conquest of Ceuta — the expedition was led by King John I, with the young Prince Henry the Navigator among the fleet — Porto sent all its meat overseas to feed the fleet, keeping only the tripe for its own people. The locals invented this dish from what was left, and ever since have proudly worn the 'tripeiros' nickname. The combination of multiple cuts (tripe, chouriço, pork belly, ham, and chicken), white beans, and a hint of cumin is the canonical Porto Sunday lunch.
Beef tripe with white beans, sausage, and vegetables — Porto's signature stew, the dish that gave the city's residents their nickname 'tripeiros'. Slow-cooked, served on a Sunday.
Porto's tripe legend dates to 1415 when residents gave all the city's beef to Portuguese navigators, keeping only the offal — the tripe dish became cultural identity. The white beans add starch that gels the broth without flour.
Variations
Porto tripas use white beans and sausage; Lisbon version uses chickpeas; Beira version uses kidney beans — three tripe stews.

Ingredients
How it's made
6 steps · 4 hours
- 1124 min
Soak 200g dried white beans overnight. Drain; simmer in fresh water 45 min until tender.
- 214 min
Clean 600g beef tripe thoroughly, blanch in boiling water 5 min, drain. Cut into 3cm strips.
Watch outAfter blanching, the tripe should smell clean and look pale — if it still smells strong, rinse and blanch again.
- 314 min
In a large pot, brown 150g chorizo and 100g pork belly cubes in olive oil. Add 1 chopped onion and 4 garlic cloves; sauté 5 min.
Watch outBrown the chorizo and pork belly until the fat renders and the edges catch color — that rendered fat flavors everything after.
- 441 min
Add the tripe, 1 tsp ground cumin, 1 bay leaf, 1 tsp paprika, 1 carrot in chunks, and water to cover. Simmer 90 minutes.
Watch outKeep it at a lazy simmer, not a hard boil; after 90 minutes the tripe should yield easily when pressed.
- 541 min
Add the cooked beans and 100g cooked ham. Simmer 30 more minutes. Adjust salt.
- 66 min
Finish with chopped parsley. Serve with white rice and lemon wedges on the side.
