The Tashkent table reflects this: shashlik (charcoal-grilled lamb skewers, Caucasus-Central Asian), lagman (hand-pulled Uyghur-Uzbek noodle soup), chuchvara (small lamb dumplings in broth), mastava (a substantial sour-cream-and-meat rice soup). The Tashkent plov is more rice-and-meat-focused than the Bukharan plov or the Samarkand plov — it's the everyday plov, served at lunchtime canteens.
