From Goa's Hindu kitchen, predating the 1510 Portuguese arrival, though the name in Konkani is shagoti (शागोती); 'chacuti'/'xacuti' is the Portuguese spelling of it. The blend of poppy seed, coconut and roasted whole spices reflects the Saraswat Brahmin technique of dry-roasting before grinding. Portuguese rule pulled chili and vinegar into many Goan dishes; Xacuti kept the older, masala-driven profile.

A dark, almost black-brown chicken curry, thicker than Goan vindaloo and gritty with ground spice. Roasted poppy seed and grated coconut do the heavy lifting — earthy, slightly bitter, with dried Kashmiri chili for color, not heat. Star anise and clove come up late on the tongue. Eat with sannas or pao to mop the gravy; rice flattens it.
The dry-roast is non-negotiable. Coconut, poppy seed, coriander and dried chili go into a hot pan with no oil until the coconut turns the color of milk chocolate; only then ground with water into a paste. Skip the roast and the gravy goes pale, sweet and one-note — the dark color and bitterness come from the Maillard on the coconut, not from long simmering.
Variations
Chicken xacuti is the canonical; lamb xacuti runs richer and longer-cooked; vegetarian mushroom or jackfruit versions appear in Saraswat homes; Vasco-da-Gama-area cooks add a touch of vinegar, North Goa keeps it dry-spiced only.
