Welsh cooking grows from steep pastoral hillsides — lamb that grazes on gorse and heather, leeks that grow in damp valleys, cawl (the national stew) simmered all day with whatever vegetables came in from the garden. The PGI-protected Welsh lamb is one of the world's most flavorful — gamy, lean, herb-perfumed from the wild diet. Welsh Rarebit (cheese sauce on toast) is the country's most-exported recipe, but the everyday plate is cawl, Welsh cakes from the griddle, and bara brith dense with tea-soaked fruit.

Beyond the central pastoral identity, Welsh food has coastal traditions — laverbread (seaweed paste), cockles from Penclawdd beach, salt-marsh lamb from Gower. Glamorgan sausages, the country's signature vegetarian dish, predate modern dietary movements by centuries. The Caerphilly cheese tradition spans west to east; Wensleydale (Yorkshire-born, first made by French Cistercian monks) traveled with the language into Welsh kitchens.
