View page →A Siberian kitchen plans backwards from the deep freeze. In October the family packs four hundred pelmeni — meat-and-onion in thin dough — onto trays that go straight outside to freeze, then into burlap sacks that hang in the unheated porch all winter. A pot of boiled water plus 20 frozen pelmeni equals dinner in 8 minutes when it's -35°C and you came home with a face like a rock. Stroganina — frozen whitefish shaved into translucent ribbons with a long knife — is dressed only with salt and pepper. The bird-cherry tart uses flour made from a wild forest fruit that grows nowhere else.
Within Russia's regional kitchens, Siberia is the engineering one — every dish reflects six months of winter and the foods the taiga and tundra actually yield: freshwater whitefish, game, wild berries, buckwheat, rye, the indigenous Yakut and Buryat staples. Yakut and Evenk influences (kumys mare's milk, stroganina, suspended-fat dishes) show up alongside the more familiar Russian peasant canon. The cooking is unornate and ferociously efficient — there's no room for fuss when the weather wants to kill you.
