View page →Chiapas is Mexico's southernmost state, bordering Guatemala — Mayan indigenous foundation, mountain-jungle climate, and a cuisine distinct from the rest of Mexico. Cochito horneado is the festival dish: a whole young pig marinated in achiote and adobo, roasted in a wood-fired oven for hours. Sopa de pan chiapaneca is a unique soup of toasted bread, plantains, raisins, and chicken broth — sweet, savory, layered. Tamales juacane are corn-masa tamales whose filling is a paste of ground pumpkin seeds, black beans, and dried shrimp, wrapped in hierba santa leaves — a pre-Hispanic technique. Pozol is the cold, lightly fermented maize-and-cacao drink. Chiapas coffee is grown in highland Mayan villages. The cuisine is Mayan-foundation deep, with techniques (pumpkin-seed masa, banana-leaf wrapping, achiote everything) that predate Spanish contact by millennia.
