Tex-Mex evolved on the Texan-Mexican border: nachos invented in Piedras Negras 1943, fajitas popularized in Houston 1970s (the dish itself traces to South Texas ranch cooking), queso dip pure Texan. Breakfast tacos in Austin, kolaches in Czech-Texan central counties. The cuisine is meat-driven, fire-cooked, spice-deep, and culturally distinct from both the Mexican and the rest of American.
