Visayas is the central island group of the Philippines and the kitchen of the country's most-celebrated lechon (Cebu) and one of its most-defining noodle bowls (Iloilo's La Paz Batchoy). The Visayan style differs from Luzon: cleaner broths, more seafood (the islands are surrounded by sea), and a strong Chinese-Filipino influence — humba (sweet-soy pork) is the regional answer to Tagalog adobo. Chicken inasal from Bacolod, grilled over coconut-husk coals with annatto and lemongrass, is one of the Philippines' great grills.

Inside Visayas, each major island has its own table. Cebu is the lechon capital, where Anthony Bourdain ate what he called 'the best pig in the world.' Iloilo's batchoy is the morning-and-evening noodle bowl from the La Paz Public Market. Negros (Bacolod) is sugar country, producing not just inasal but also countless sweets. Bohol and Leyte contribute their humbas. The Visayan plate stays lighter and clearer than Luzon's, but doesn't lack ambition.
