Singapore has no village hinterland — every dish is a city dish. The Hainanese diaspora gave it Hainanese chicken rice, now the national dish: poached chicken, fragrant rice cooked in chicken fat, three sauces (chili, ginger-scallion, dark soy). The Peranakan-Nyonya community contributed laksa, a coconut-spice noodle soup, and kueh (layered rice-and-pandan cakes). The Malay community supplies nasi lemak with sambal, ikan bilis, peanuts. The Indian community runs prata stalls and Little India's banana-leaf rice. Hawker centers — government-built communal food courts — sell every cuisine at single-digit prices. The cuisine is the result of 200 years of immigration distilled into a 700 km² island.
