View page →Jeolla is in Korea's southwest — known as the "grandmother kitchen" of the country, with the most elaborate banchan side-dish tradition in Korea. A jeongsik (set meal) can have 30-40 small plates: fermented sauces, seaweed, sashimi, pickles, each in its own compartment.
Fermentation: Jeolla's sauce crocks are legendary — Korea's oldest doenjang (soybean paste), ganjang (soy sauce), gochujang (chili paste) come from here. Jeotgal (salted fermented seafood) is also Jeolla's signature — salt-cured clams, shrimp, anchovy paste.
